Chocolate chip shortbread



These little biscuits are quick and easy to do, lovely with the morning coffee! I buy the Supercook organic and Fairtrade chocolate chips.

8oz plain flour
6oz butter
4 oz sugar
handful of chocolate chips of your choice

Sift flour into bowl, and cut up butter into it; start rubbing in the butter, then add the sugar and rub in until amalgamated, then add the chips. Use your hands to work into a softish dough, roll into two sausage shapes and chill in the fridge for 20 minutes. Cut into slices, place onto baking tin, and bake in a hottish oven for 15 minutes or so until golden brown. Cool on a wire rack. Makes 2 dozen.

Thank you MrsL... will have a go at this recipe. Sounds lovely and like the simplicity of the recipe.
Was going to make your chocolate and chestnut cake, but still trying to get the chestnut puree. Will get my daughter to have a look around for some for me.

Oh, that's such a coincidence Jane, I've been trying to get hold of some chestnut puree to do Mrs L's cake too! Sent poor OH all over the place asking for it - with no luck. Anyway, will keep trying, and in the meantime, I'll make these cookies instead!!

We always had these as children; we called them Winter Quickies. Sadly they didn't have any chocolate chips but even more sadly mum always topped them with a gruesome bitter walnut! I need to make some tomorrow - you have created a craving! t.x
