Banana and blueberry tea loaf




I made this yesterday and it's really, really nice; not sweet, and nice with a bit of butter as a proper tea loaf rather than a cake. Also a good way of using up squishy bananas




8oz SR flour

3oz butter

3oz sugar

1 egg

3 or so ripe bananas

approx 4 oz blueberries



Cream butter and sugar, add egg, beat well. Add in mashed bananas, then blueberries, mix well and add flour. Mix will seem a bit stiffer than cake mix. Turn into a prepared loaf tin and bake in a hot oven until risen and golden brown. Cool on wire rack.

That is such a handy little recipe. It looks really lovely.
