The only muffin you'll ever need...................



For me, the ultimate muffin is a blueberry one - squishy and juiceful, soft and not sweet. The first muffin I ever had was a blueberry muffin in Bath, over 20 years ago, neer forgotten it.Here is the ultimate bluberry muffin recipe. Try it, youwon;t be disappointed. They must be eaten fresh, but tht won't be a problem.

10 oz SR flour
3oz granulated sugar
2 eggs
8 fl oz milk
4 oz butter
large handful of fresh or frozen blueberries, make sure there's plenty
proper large muffin cases and tin (12)

Put the cases in the tin ready, sieve flour into bowl and stir in sugar. Melt the butter in the milk in a pan, then  pour on to the eggs and beat well. Add blueberries to flour and sugar, stir well, then add in the liquid.  Here's the important bit - stir together to a lumpy looking batter - don't beat it like a sponge cake, you need a good lumpy but loose mixture. Divide between cases and straight inot a hot oven for 20 - 25 minutes or so until golden brown and well risen. Cool on wire rack.
