Chestnut and cranberry roast

I made this the other day, it turned out lovely, nice and seasonal!

1lb prepared chestnuts (I used frozen ones, thawed)
2 small onions, chopped very finely
herbs of yoru choice, fresh or dried
2 eggs, beaten
Handful of cranberries, fresh or frozen
Salt and pepper
teaspoonful of Marmite or similar
Other things to taste/availability, eg left over veg, cut small, cooked rice, lentils, spoonful of chutney, chopped apple, etc

Mince the chestnuts, or whizz them in a processor. Turn into a mixing bowl, add the rest of the ingredients and mix very well. The mixture should be a bit slack, but not too wet. Lightly oil a loaf tina nd fill with the mixture, bake in a hottish oven for 30 - 40 minutes until set and browned on top. Leave to cool for ten minutes, then turn out of the tin. Serve in slices or sccops/spoonfuls, with root vegetables and mashed potato.
This would freeze well too, either whole or in portions, and would make an excellent vegetarian Christmas dinner.

Mmm, sounds yummy. I have a bit of a thing about chestnuts at the moment so I'll have to give this a try!
