Vegan chocolate mousse

This was part of a challenge last month in the cooking group I belong to on Facebook - make a vegan pudding. I've been wanting to have a go at this for a long time, and finally got round to it today. It's my variation on a standard recipe that I've seen on several sites around the net - I made mine according to what I had in the larder.  I'm delighted to report that it does indeed taste very, very good, and I would make it again I think. I used American measures as that's what was in the original recipe, but easy to find a converter online if you don't possess a cup measure.

2 small very ripe avocados
1/4 cup cocoa
1/4 cup almond milk
1 good tbsp. golden syrup
dash of vanilla extract

Half and scoop out the avocado flesh into a bowl and mash well with a fork; add other ingredients and beat well for a couple of minutes. Spoon into ramekins and chill.




I made my own almond milk by putting some ground almonds into a bowl and covering them with boiling water. let them stand a few minutes, then drain through a strainer. Very successful, easy and quicker than using whole almonds.

Sounds yummy, I have had this pudding before, but not made with golden syrup.
I make almond milk by soaking the almonds overnight then blitzing them with some (fresh) water in the blender. It might work to use ready ground almonds - or maybe use a mouli to grind the whole soaked almonds... I'll have to try that.
