Irish soda bread


This is one of my very favourites, so I thought I'd share my recipe with you. We're having this one tonight for supper with Irish stew.
1lb bread flour
1/2 teasp baking soda (bicarb)
1/2 teasp cream of tartar
1 teasp salt
buttermilk/milk to mix
Place dry ingredients in a bowl and stir well. Add enough buttermilk/milk to give a softish consistency, but not too soft. Form into a round, score the top into farls and bake in a hot oven for 30 - 40 minutes. Cool on a rack, or wrapped in a clean tea towel.
I like it next day, too when it has "mellowed" a bit, with freshly made butter on it.

I like the sound of that - bread made without having to knead it. Whenever I knead dough, my kitchen table (ancient and very wobbly) - "walks" off towards the far side of the room. And it has decorative bits where flour gathers and cannot be cleaned from. Oh for a new table..... but not until we have converted the old barn into our new house.

...sounds delightful...used to be one of my favourites, my mom used to make it all the time when I was little, all the Irish relatives made it for tea when we visited, we collected variations of the recipe from B & B's in Ireland last time we visited.....but I haven't made it since I found out I was gluten intolerant....must try to create a version that is gluten free! Thanks for the inspiration!

Now this looks very tasty and fairly simple too, so may give it a go! Also interested in your butter making, may have to loo into this?

Can you get gluten-free flour, Eileen? We can over here, and apparently it works quite well. Might be worth hunting out.
